Baby back ribs. These are distinctly different to spare ribs (that are taken from beneath the belly). They come from alongside the loin and are the same portion of ribs that would be attached to the rack if they were left on. They have a slight curve to them and they are quite generously spaced, leaving a higher ratio of meat in between the bones but, more impressively, the fine people at Borrowdale leave at least an extra 5mm of meat on top as well making these some seriously impressive ribs!
