These briskets are thick, reasonably even from the point to the flat and surprisingly short - no trouble fitting the whole thing on your bbq! They are exquisitely marbled (Pure Black is a favourite amongst all of here at 56), with a gorgeous layer of protective fat on top and absolutely delicious, full Black Angus beef-flavoured meat. They cook beautifully; easy to monitor, thick enough to take hours of smoke and sufficiently marbled for a forgiving cook that won't dry out.
